Carrot Layer Cake Cups

The Easter bunny 🐰wants cake with its carrots, make these adorable spring carrot cake cups instead of leaving out a boring old carrot for the bunny đŸ„•. Tulip bakeware from Michael’s Stores and topped my layer cakes with an icing carrot from Sprinkle pop and I only use Philladelphis cream cheese for the best cream cheese frosting.


TOOLS 

  • Stand mixer
  • Paddle attachment
  • Mixer Skirt fabric splash guard
  • Baking pan, 9x7 brownie pan or medium square
  • Round cookie cutter
  • 4 remekins or small baking dishes
  • Piping bag or plastic zip lock bag
  • Sprinkle Pop Carrot icing decorations


INGREDIENTS


  • 2-3 carrots shredded (~1 1/2 cups / 150g)
  • 1 cup brown sugar
  • 2 large eggs
  • 3/4 cup granulated sugar
  • 1/2 a cup vegetable oil
  • 1 tsp vanilla
  • 1 and 1/2 cups all purpose four
  • 2 tsp cinnamon
  • 3/4 tsp baking soda


Frosting

  • 8 oz regular cream cheese
  • 4 TBSP butter room temp
  • 2 cups powdered sugar


LETS BAKE- makes 4 layer cakes


  1. Gather all ingredients.
  2. Shred carrots thinly and add brown sugar and mix until uniform, allow to sit 30 minutes. (This will turn “soupy” this will help with to achieve a moist sponge)
  3. Preheat oven to 350 degrees.
  4. In your stand mixer with paddle attachment, and Mixer Skirt fabric splash guard for stand mixers attached, beat eggs on medium speed until fluffy.
  5. Add  sugar and continue to mix until combined. Add vanilla and oil and mix.
  6. In a separate bowl combine flour, baking soda and cinnamon and mix to combine.
  7. Gradually add flour mixture to wet ingredients in stand mixer bowl while mixer is on medium speed.
  8. Once combined, add carrot and brown sugar mixture, continue to mix on medium speed until just combined.
  9. Pour into a greased 9x7 pan.
  10. Bake for 20 minutes or until a toothpick comes out clean when poked in center of the cake.
  11. Allow to cool completely.
  12. In your stand mixer with paddle attachment, and Mixer Skirt fabric splash guard for stand mixers attached, beat cream cheese, butter and powdered sugar until fluffy. Transfer to a piping bag and refrigerate if needed.
  13. Cut circles in the cake using a cookie cutter and cut the circles in half  to create two thinner rounds.
  14. Add one circle to a dish of your choice, pipe a layer of frosting, add another layer of cake and pipe another layer of frosting, smoothing the top layer and adding a carrot decoration to the center.
  15. Enjoy!
