Stand mixer (KitchenAid, Cuisinart, Dash—any model works)

  • Paddle attachment

  • 12-cavity mini Bundt pan
  • Piping bag or ziplock bag
  • Zester

 

📝 Ingredients

Mini Lemon Bundt Cakes:

  • 1½ cups all-purpose flour
  • ¼ tsp baking soda
  • ¼ tsp salt
  • ½ cup butter (room temp) + 1 tbsp for greasing
  • 1 cup granulated sugar
  • 2 eggs (room temp)
  • ½ cup low-fat coconut milk
  • 2 tsp packed lemon zest
  • 2 tbsp fresh-squeezed lemon juice

Optional Lemon Glaze:

  • 1 cup powdered sugar
  • 2 tsp lemon zest
  • 3 tbsp lemon juice
  • 1 tbsp melted butter

 

Let’s Bake! (Makes 12 mini Bundts)

  1. Prep citrus: Zest approx. 4 lemons into a bowl. Juice separately.
  2. Preheat oven to 350°F.
  3. In your stand mixer with paddle attachment and your Mixer Skirt attached, beat butter and sugar on medium speed until fluffy.
  4. Add eggs, one at a time. Then slowly add in lemon zest and juice.
  5. With mixer off, pour in coconut milk. Mix again on medium until fully combined.
  6. In a separate bowl, combine flour, baking soda, and salt. Gradually add this to the mixer bowl while mixing on low-medium speed.
  7. Pipe batter into a greased mini Bundt pan (don’t fill to the top!).
  8. Bake for about 16 minutes (not 6—assuming this was a typo), or until a toothpick comes out clean.
  9. Cool completely. Eat plain or add optional glaze!

🍋 Optional Lemon Glaze

  1. Mix powdered sugar, lemon juice, and zest.
  2. Stir in melted butter until smooth.
  3. Dip each mini cake and wipe off excess.
  4. Allow glaze to set—and enjoy!
